17. GINATAANG BILO-BILO (Filipino Dish) by: Kenneth Castro Divina

I recently re-discovered my passion in cooking as you may see in my past posts. I now love to make unique blogs about the food that I cook for my family. But because there is a problem with our D'u internet connection- we cannot access steemit and we can not make blog every day. But this did not stop me from making blogs. I kept on writing my blogs, anticipating that my Isp will now wakeup and do something about our issue.


Let's start cooking GINATAAN "Kenneth's Limited Recipe"


MY INGREDIENTS:

  • 1 cup glutinous rice flour (malagkit)
  • 1 cup sugar
  • 1/2 cup raw sago
  • 2 to 3 pcs of banana (saba)
  • 2 pcs of carrot (optional) or sweet potato
  • 2 cups of coconut milk

ORIGINAL INGREDIENTS

  • 1 cup glutinous rice flour (Malagkit)
  • 2 cups of coconut milk
  • 1 cup sugar
  • 1/2 cup "raw" sago
  • 1/4 cup jackfruit (langka)
  • 1 cup of sweet potato (Kamote)
  • 2 pcs of banana (Saba)
  • 1 cup of sweet yam (Ube)

INSTRUCTION:

1. Put 1 cup of glutinous rice flour in a bowl and 1/2 cup of water then mix it well until does not stick on the hands when forming a ball. Get small amounts and roll it with your palms to form small balls. Set aside.


2. Cut the sweet potato, sweet yam and the banana into cubes. Slice the jackfruit into vertical strips and set aside.


3. Put 1 cup of raw sago in a pot of boiling water and let it boil, stirring gently for 5 minutes or until it appears like clear glass marble. Once it is done, strain excess water and set aside. NOTE: there are different colors of sago. You can use the color you prefer to make the dish more visually appealing.

4. You can use canned coconut milk or fresh milk from shredded coconut. If you will use shredded coconut, add 2 cups of warm water in a bowl to extract the coconut milk and set aside. Add another cup of water to the coconut shreds and make another batch of coconut milk. In a pot, boil the second extract and add 1 cup of water. Do not cover.


5. Put 1 cup of sugar in boiled coconut milk and stir gently until it dissolves. Add the cubed banana and sweet potato and boil for 5 to 10 minutes.


6. Gently add the glutinous flour balls and boil for 3 minutes, stirring gently. Finally, add the jack fruit and sago. Let boil for 1 minute then add the first extract coconut milk. Boil for another 3 minutes.


7. Done! Serve hot or cold! But for me, it is delicious when it is in normal temperature... I hope you like it!!!

I love good lumpia (not sure if that's the proper filipino spelling or not) and enjoy a mix of oriental and asian dishes (not so much the spicy ones). I would love to try this one sometime. Sounds comforting.
