Test kitchen 08-31-2018

inspired by #steemkitchen latest contests to create cheap favorites, I spent today recreating a dish mom used to make. It didn’t come out as good as hers, which’s why I’m not entering it into the contest yet. Other options I am considering are a mushroom soup, and a cream based appetizer.

The dish is syrian from the Aleppo region, where my family’s from. The base is similar to a previous recipe I posted, and is a common base for many dishes of this variety. It uses yogurt, tahini and various seasonings depending on the dish. Since yogurt is high in carbs, I use labne instead. Here are some pictures from today’s kitchen

You say it didn’t turn out well? It looks great from here. What is that yogurt substitute you used? Is it dairy free? I’d love to try that Syrian dish. I swear there’s nothing like family recipes :)

It was over spiced because I added Mexican spices to the original recipe, but the fusion was too intense. Haha. It wasn’t bad, I still scarfed it down. It just wasn’t like mom made it. I’ll work on it again :)

The yogurt replacement is called Labne, they started selling it at Sprouts and Whole Foods, sometimes called Creme Kefir. Currently Jon’s, King’s Market, and other middle eastern markets have the best varieties and prices on it. It’s cultured middle eastern cream that tastes like zesty yogurt without all the lactose. It’s not dairy free, but you can maybe use a little bit of it to culture coconut cream ?

I often add Mexican spices to dishes if I’m not sure how I’ll like it. Two months ago I made a traditional South African dish called bunny chow, and it called for some spices I had never used before so I added a little cumin and garlic to give my palate a familiar taste. It turned out great but I didn’t need the cumin.

I think the market by us carries a cultured plant based yogurt. I’ll check it out. By the way, that grilled colored cauliflower looks great !

spices are fun and scary! I like cumin with tomatoes, salt, and olive oil! Fusion foods are fun to play with! And thanks! I really hope you get to try it one day! I’m curious to try it with cultured plant yogurts!

I think I use cumin in most of my cooking. Just recently I discovered herbs de provence and it’s delicious. Haha… the great thing about cooking yourself is that you can fuse any spices or flavors you want. I have yet to try a cultured plant yogurt but imagine it’s all good. When I was younger I loved yogurt. I’m sure I’d love plant yogurt too!
