Two of my vegan stews I make for @10 days ofmeals! Started in grad school (when I was very, very poor in Manila and became a vegetarian by accident- and became so healthy & happy 😊 still am; just have not yet given up cheese w/red wine!). A reminder to myself to make another this weekend - or no dinner at lunch ready for the week ahead!
