Quinoa with mixed vegetables & Roast Mackerel fillet

Ingredients:
1 cup quinoa
½ chopped red onion
5 baby tomatoes
1 cucumber
10 leafs of baby spinach
3 leafs pak choi
1 carrot chopped
¼ cup coconut oil
3 tbs lemon juice
