Ehh!! It's weekend again. It's time to relax and enjoy some food. Eating a pizza on a weekend is perfect!!. So here is my version of Cheesy Pizza. So take a look at it and get your hands on it.
So here is the recipe to make a 11 inch pizza!
Ingredients for the pizza dough:
All purpose flour – 160 gm
Yeast – 3.5 gm
Salt – 1 tsp
Sugar – 1/2 tsp
Lukewarm water – 180 ml
For the pizza sauce:
Tomatoes – 3
Capsicum – 1/4 cup (finely chopped)
Garlic – 2 cloves (finely chopped)
Oregano – 1 tsp
Chilli powder – 1/4 tsp
Sugar – 1 tsp
Olive oil – 1 tsp
Salt – to taste
For the toppings:
Cooked chicken – 100 gm
Pepper powder – 1/2 tsp
Ginger & garlic – 1 tsp (finely chopped)
Olive oil – 1 tbsp
Salt – a pinch
Onion – 1 (diced)
Mushroom – 4 (sliced)
Tomato – 4 to 5 slices
Olives – 5 (sliced)
Capsicum – 1 tbsp (preferably use green, red and yellow peppers)
Mozzarella cheese – 200 gm
So let's get to the method!
To prepare the pizza dough:
-Take the yeast and add lukewarm water to it and keep it aside for 5 minutes.
-To a bowl add the all purpose flour, salt, sugar, oil and the yeast slurry and mix it really well.
-Knead the dough really well for about 10 minutes.
-Transfer it into a bowl which is coated with oil so that when you place the dough it should not stick to the walls of the bowl.
-Cover the dough and keep it for rising for about 1 to 2 hours.
-Keep it in a warm place. (I usually keep it inside the oven and obviously with the oven turned off )
Now, let's prepare the pizza sauce!
-Take 2 tomatoes out of the 3 and mark 'X' on the bottom of the tomatoes.
-Add these to boiling water and cook for 4 minutes.
-Then take them out of the hot water and run it through cold water.
-This is known as blanching and is done to remove the skin of the tomatoes easily.
-Blend the peeled tomatoes and keep it aside.
-Blend the remaining tomato also and keep it aside. (uncooked)
-Place a pan and add olive oil to it.
-To this add chopped garlic and capsicum and saute well.
-Then add the cooked blended tomato to this pan and cook for 5 minutes.
-Next add the uncooked blended tomato along with sugar, chilli powder, oregano and salt. Cook this until it becomes a thick paste.
-The purpose of adding uncooked blended tomato is to bring out a red color for the sauce.
-Keep it aside.
To prepare the chicken topping:
-Cook chicken by adding water and salt.
-Then shred the chicken into small pieces.
-Place a pan and pour little olive oil and add chopped ginger and garlic.
-To this add the shredded chicken along with pepper powder and salt.
-Cook for 1 minute and keep it aside.
Now lets bring everything together :)
-Preheat the oven.
-Once the dough has doubled in size, transfer it into a greased pizza pan and press the dough into a circle.
-Then using a fork prick the dough to make holes.
-Cover this using a wet cloth for 5 minutes.
-Then on top of the base, spread the prepared pizza sauce
-Next, few slices of Mozzarella cheese.
-Then continue adding the veggies.
-You can use any toppings of your choice!
-Next I added the chicken, onions, capsicum, mushrooms, tomatoes, olives.
-Finally I added the remaining slices of Mozzarella cheese.
-Place the pizza into the preheated oven and keep it for 30 minutes at 180°C to 190°C.
Cheesy Chicken Pizza is ready.
