Method:

3 eggs

200 g sugar

200 g flour

100 grams of potato starch

1 teaspoon baking powder

1/2 cup vegetable oil

1 glass of milk

                                                                    PREPARATION 


Preheat oven to 180 degrees. Work the egg yolks with sugar and oil and add the milk little by little, stirring well to obtain a smooth cream. Add the zest and juice of two lemons, the flour, starch and baking powder sifted, mix well, then transferred to a mold for plum cake buttered and floured. Cook for 40-45 minutes. After this time, do the toothpick test, and if it was still damp increase the cooking time until it is completely dry. Baked plum cake and let it cool on a wire rack. After this time served in a plate sprinkle the surface with icing sugar and garnish with slices of fresh lemon. It can also freeze and remains always tasty.
