CEBUANO BINIGNIT: Our kind of Good Friday!

Good Friday is a Christian holiday commemorating the crucifixion of Jesus Christ and his death at Calvary. It is a crucial day of the year. Ever since Jesus died and was raised, Christians have proclaimed the cross and resurrection of Jesus to be the decisive turning point for all creation.

We all do have differences on celebrating the Christian holidays like going to provinces, to churches, or to the Holy places together with our family and relatives. As of now, as we gathered for the Holy Week, we Cebuanos somehow had a tradition on offering or celebrating the said holidays by serving a BINIGNIT. It's actually customary in our province to prepare and serve binignit during Holy Week, especially on Good Friday which is yesterday! Binignit is a regional variation of ginataang halo-halo. But while the latter adds bilo-bilo to its list of ingredients, binignit uses milled glutinous rice. In this rich mixture, different tubers such as gabi, kamote and purple yam along with sago pearls, jackfruit strips and saba bananas are stewed in sweetened coconut milk. Binignit is either served hot or cold and often enjoyed as dessert or midday snack. We usually enjoy eating binignit together with our family, friends, neighbors, relatives, etc. This is part of the Cebuanos tradition. Not just the Cebuanos but also on other Filipinos.

Hence, let me share to you on how to cook the Cebuano Binignit. I just helped and assisted my mother by cooking the binignit.

INGREDIENTS:
•gabi (taro root) you can substitute cassava if available

• sugar

• yellow camote (sweet potatoes)

• landang or tapioca

• ripe saba (plantain)

• coconut milk

• coconut milk, diluted with water(by having this, just pressed over the coconut residue(sapal))

INSTRUCTIONS:
1) Sliced ripe saba, yellow camote and gabi into pieces(cubes).

2) In a pot over medium heat. Bring to a simmer (DO NOT BOIL as milk will curdle).

3) Add glutinous rice and cook, stirring occasionally, for about 8 to 10 minutes.

4) Add gabi, sago and kamote. Cook, stirring occasionally, for about 15 to 20 minutes or until tender. Add bananas and sago.

5) Add coconut milk for flavoring. Water is not enough for making sabaw(soup) for your binignit.

6) Add brown sugar and continue to cook, stirring occasionally, for about 8 to 10 minutes. If you want more sweetness, just add condensed milk. Serve hot or cold.
