I got married 10 years ago and I can still remember the taste of my wedding cake. Mmmm cake. We had 3 different flavors - Almond with a raspberry filling. Peach with champagne filling. And chocolate with a ganache filling. You know what else I remember? The price tag.
While I absolutely loved my wedding cake and I love some of the high end European bakeries around here, I just can't afford to buy expensive cakes very often. And while I love baking, making a cake from scratch often requires entirely too many ingredients and too many dirty bowls. So most of the time I want to make a cake, I grab a cheap cake mix and call it a day. If you're in the same boat but have higher expectations on taste, this is a great hack to make your cheap cake-mix cake taste incredible.
Follow the basic directions on the cake mix, with these changes:
Add 2 more eggs. (If the mix calls for 1 egg, use 3)
Replace oil with melted butter. If the recipe calls for 1/4 vegetable oil, melt butter and measure out a 1/4 cup. If you are measuring it prior to melting, make sure to use a bit more butter as it will shrink down as it melts. You want the volume of the MELTED butter to match the volume of the oil.
Replace the water in the recipe with milk
Bake as directed on the package and then wow your friends and family with your exquisite (and cheap!) masterpiece.
