This Sunday I cooked

Portuguese Pumpkin Christmas dessert (Filhós)

"Filhós" is my Christmas favorite dessert!! It's a typical, simple and delicious sweet that is usually prepared for the holiday season. I know, I know, the holiday season is over...but for me, it only ends today with this last Christmas cook!

Ingredients

  • 2 kg / (4.41 lb) pumpkin
  • 100 grams / (3.527 oz) sugar
  • 900 grams / (1.984 lb) all-purpose flour
  • zest and juice of three oranges
  • 3 eggs
  • 10 g (0.3527 oz) bakers yeast
  • salt (to taste)
  • sugar and cinnamon
  • vegetable oil for frying

Preparation

1.Pumpkin preparation

Peel and wash. Cut the pumpkin into small pieces and put it in a pan with water seasoned with salt. Let it boil on medium heat until cooked (about 25 to 30 minutes). Drain the pumpkin and set aside.

2. Orange preparation

Wash the oranges with hot water and finely grate the peel.Squeeze the oranges and strain the juice.Dissolve bakers yeast in the orange juice and set aside.

3. Mass preparation

Puree the pumpkin with a hand pulper and add the eggs, sugar, oranje zest and juice and finally the flour.

4. Mixing part

In the beggining, we need to mix it gently until the flour gets well mixed, then knead the dough until air bubbles appear.

5. Cover it with a clean cloth and set aside in a warmer place for about 2 hours. (We put this in the sun!)

6. Frying

Heat the oil in a large saucepan. When it gets hot, wet the spoon and add small portions of the dough with it and fry them on both sides until golden. When they are fried, remove them with a skimmer and place on a bowl with absorbent paper.

7. Sugar & Cinnamon

Let it cool slightly and coat them in sugar mixed with lots of cinnamon!

This Christmas dessert goes fine with black coffee, we love to have this on Christmas night. Hope you enjoyed :)

These Sunday Cook project began with a strong will to contribute to Steemit with my personal view of Portuguese cuisine. I really believe we have plenty of good food. I'm not a professional or nothing similar, but I can assure that I'll do my best!

On Sundays, I like to prepare more elaborate and delicious food. It requires time and patient. Usually, I cook some traditional Portuguese food, or at least with Portuguese inspiration :) I try to do it in a healthier way, using the minimum fat as possible, and normally I pick some recipe and transform it. During the week I don't like to spend much time cooking (no time at all), that's why I get totally motivated to cook on Sundays!!
