I'm back with one of my marvelous SundayCook's!!
Ahah ;) I'm being cocky, I know!! But this one totally deserves it!
It's amazing to order food in a restaurant and just leave without the dish washing, but I missed preparing my Sunday cooks!!
As cold days returned, I went for another roast (for me a roast is a kind of a Sunday Cook synonym). When I entered in the butcher I only knew it would be a roast and picked the nicest piece of meat that was available. I choose a piece of pork neck.
Probably you had already watched some of my previous roasted pork posts, but I did something different this time. I didn't want it regular ;)
This Sunday I cooked
Roasted pork with potatoes and carrots
Ingredients
- 1,5 Kg pork loin
- 4 potatoes
- 3 carrots
- 2 medium onions
- 4 twigs of fresh thyme
- 5 garlic cloves
- 1 bay leaf
- olive oil (to taste)
- white wine (to taste)
- 1 lemon juice
- black pepper (to taste)
- sweet pepper (1 teaspoon, just to had color to the meat)
- salt (to taste)
Preparation
1 - Previously season the pork with salt, black and sweet pepper, bay leaf, chopped garlic, white wine and lemon juice. I let this marinate during the night in the fridge.
2 - Pre-heat the oven 180 ºC - 200ºC.
Pick a roaster tray and cover it with sliced onion. Then add the pork and seasoned gravy, add the olive oil and it's ready to go to the oven.
3 - Meanwhile, unpeel the potatoes and carrots and place them in a pan with boiling water seasoned with salt and fresh thyme. Let it cook for 5 minutes (I didn't want they get fully cooked).
4 - Cut the potatoes and carrots in nice pieces (I'm not good cutting raw carrots into uniform pieces, this way helped a lot)
5 - Place the vegetables in the roaster tray and sprinkle with the released juices.
6 - Place the roaster tray in the oven until the meat is cooked at your point.
It's ready!! Let's serve it!!
Facts: Sunday cooks always have a great aroma, and this fresh thyme...yum! I serve this with cabbage...
and washed down with an angolan beer Cuca.

What is Sunday Cook?!
These Sunday Cook project began with a strong will to contribute to Steemit with my personal view of Portuguese cuisine. I really believe we have plenty of good food. I'm not a professional or nothing similar, but I can assure that I'll do my best! On Sundays, I like to prepare more elaborate and delicious food. It requires time and patient. Usually, I cook some traditional Portuguese food, or at least with Portuguese inspiration :) I try to do it in a healthier way, using the minimum fat as possible, and normally I pick some recipe and transform it. During the week I don't like to spend much time cooking (no time at all), that's why I get totally motivated to cook on Sundays!!

I'm not a huge pork fan (bacon being an exception!) but you present it very well Lily - it looks lovely :)
