Sambal (chilli paste)

I love the Indonesian kitchen and most of all the chilli paste. Chilli paste comes in various flavours, from mild to very spicey. I prefer the spicey ones. The recepy I will write down here is spicey but if you would like a milder version just let me know. The recepy is enough for about 6 people. It will be done in about 15 minutes, be carefull with the chillies, DON'T rub your eyes otherwise you will not be a happy camper. Most of the time I wear thin rubber cloves...just in case 😜

What you need:

4/5 red chillies
5 shallots
1 clove garlic
1/2 small tomato, cut into small pieces
2 teaspoon oil
1 bit salt, to taste
juice from 1/2 lime,

Pound the chillies, shallots, garlic and tomato in a mortar and pestle until a it is fine paste.
Heat the oil in a frying pan, Add the paste and turn down the heat to prevent the paste from burning. Keep stirring until it becomes fragrant and warm. Remove it from the heat and season it with the lime juice and salt. Put the paste in a jar and let it cool off. Keep it in the fridge onces it's cool. You can serve the paste with rice dishes.( I love it in everything)
