Today I present you A perfect cake for breakfast or afternoon tea, my favorite cake elsewhere.
You can vary the pleasures by replacing some dried fruits by others and replacing nuts with almonds or hazelnuts if you want .

Ingrédients

  • 150g of whole flour
  • 90g of oat flakes
  • 30g of sugar
  • 2 bags of vanilla sugar
  • 1 packet of dry yeast
  • 60 g dried figs
  • 60 g dried apricots
  • 60 g of raisins
  • 60 g of nuts
  • 50 ml of milk
  • 3 eggs
  • 3 tablespoons olive oil or other
  • 1 tablespoon of honey
  • butter (for the mold)

Method

  1. Preheat the oven to 200 ° C.

  2. Pass the dried fruit under a trickle of cold water and set aside.

  3. In the bowl of the beater, beat the eggs with sugar and honey for 3/4 minutes.

  4. Add oatmeal and flour mixed with yeast and vanilla sugar sachets

  5. Add the oil and milk while continuing to mix with the hook.

  6. Add the dried fruit, drained and cut into small pieces as well as the crushed nuts, mix everything by hand.

  7. Butter the mold and add the dough.

  8. Bake for about 30 minutes at 200 ° C.

Advice :

Check the cooking with a wooden spike that must come out dry.

Let cool for 5 minutes then put the cake on a rack.
