A Taste of India...a requested menu

India has such a different cuisine than what most United States southerners are accustomed to. In fact, the locals of Corsicana have to drive a good hour plus, to the big city of Dallas, to find any, pretty much! That, or know a global-local chef!

We are starting to see some Indian cuisine in the frozen food sections of the larger grocers...but we all know that frozen is just not quite the same. I know, it's supposed to be, but there's always that letdown! I have a client who's wanting some fairly authentic (as close as we can come, given our access to the ingredients required) Indian food. So, I went through my folder of Indian Cuisine Recipes and came up with some yummies that may be qualifiers!

For Corsicana, we have to put that Global Local spin on it! There are a lot of ingredients that cannot be found locally. For our menu for our imaginary restaurant, which acts as the order board on my private catering site, I've selected familiar Indian foods, mains and sides, along with some street foods. And, I've tried to focus on recipes that I can get the ingredients for without having to traipse out of town. Our locals have very sheltered taste buds...can't take them too far off the farm! Or, make it too hot! lololol So, to you real citizens of India, I apologize for having to Americanize your beautiful cuisine! Truly!

Here are the items my clients have selected...

Appetizers

Bhajias...these look so delicious! Indian spiced, batter dipped thin sliced potatoes, deep fried to a wonderful golden goodness...serving with a side of curry ketchup.

Samosas with a filling of seasoned potatoes, sweet peas and onion, in a simple dough, deep fried. (yes, we do like our fried foods)

For the Entrees...

Beef Madras Curry...this has a nice amount of heat to it, so wonderfully pungent in its flavors! It's got the ginger, garlic, and tomatoes, with all of the heavenly seasonings...garam masala, tumeric, cumin, mustard...so rich, so warm!

Indian Chicken Korma is their second main selection; with Thai or serrano chiles, unsweet coconut, ginger, garlic, plus cayenne, this dish, too, has some good heat! I'm doing this with chicken legs and thighs, rather than bite size...just for fun! We'll be doing sides of Tumeric Rice or Curry Rice, and Aloo Gobi (potatoes with cauliflower) or Aloo Phujia (potatoes with tomatoes and onions)

This one's pretty complex in its layers of flavors...I'll do my best to record the steps, as I make these dishes, for sharing here. For now, these are all web images.

I'm off to go find the best recipe for Carrot Halwa...their desired dessert! Until we visit again, my friends, Steem on, Steem on!

I seem to recall hearing that northern and southern India have very different tastes; is that so? Which region would these dishes fall into, or is this selection kind of a tour of India? I’ll admit I’m not a fan of curry which really dampens my ability to enjoy trying out Indian food :( so I play it safe when I do get the chance. That Chicken Korma looks delightful and like something I would try....and the Samosas! I want to just pop those in my mouth now! You’ve made me hungry!! :)

The chicken dish is a north Indian dish; the beef further south. My family isn't into the curry thing, either. I haven't had a chance to cook it very much, except for the occasional curried chicken salad or a mild curried cream chicken for the supper clubs. This one's going to be fun.

Soo many different kind of dishes in one place is really amazing and incredible I love Indian food my favourite thanks for sharing
