Ladies and gentleman, I introduce you the "Tre dame" from the company "Ca' de Noci", Emilia Romagna, Italy. Made from Sgavetta and other rare native varieties of vine (hand-picked), produced without sulfur, re-fermented in the bottle, 100% natural.
I had it with a really nice risotto made with citrus fruits and clams; simply AMAZING! Small hints of undergrowth in the nose, but a bit mineral in the mouth, accompanied by thin tannins and acidity, who mediated the sweet and tough battle between the two different ingredients.
I left a few drops for the next dish, some salmon-stuffed ravioli on salmon and tomato sauce...not the best combination. Maybe I should have gone a little further north...
