Channa flour pancakes (Easy VGF recipe)

My next chickpea (channa) flour recipe has been served! It makes cheap, easy, vegan, gluten-free pancakes with fewer steps and ingredients than regular pancakes. The chickpea flour simultaneously replaces egg and gluten flour. Even if you're not vegan or gluten-free, these pancakes have less carbs and more protein and nutriton but without cholesterol, so enjoy!

Ingredients

  • 1/2 cup chickpea flour
  • 1/4 tsp pink or sea salt
  • 1 1/2 tsp baking powder
  • 1 tablespoon of sugar or liquid sweetener
  • 1/4 cup + 1 Tablespoon water (may need to add more)
  • Oil for frying (coconut or olive taste best)

Directions

  • Mix dry ingredients together and then slowly add water, stir to make batter.

  • Scoop batter onto pre-heated, oiled pan.

  • Flip the pancakes when they start to bubble. Cook for another 1-2 minutes.

  • Serve with syrup or toppings and enjoy.

I was really afraid they'd taste like, well, chick peas. But that's kind of like thinking regular (wheat flour) pancakes taste like grass. When you dry and grind something into flour it's just flour... I'm amazed LOL
They were fluffy yet crispy around the edges because of the oil. Pretty dang tasty with syrup.

Well. Looks like i may have to try that out. I was worried they may taste like chick peas as well which would not be so appetizing. Lol

They're really tasty! The outer edges taste really delicious like some kind of deep fried treat.

Heheh true. I like hummus but not with maple syrup!
The only flavour I detected (other than "pancake") was a slightly nutty taste. Basically I could tell there was some protein in there along with the empty carbs. If I hadn't been told they were made using channa flour I might not have noticed.

I do think regular pancakes taste like grass haha. I always thought they were a sugar spike without any enjoyment. These ones are really good though.
