πIngredients:
Ripe bananas - 3 pieces.
Eggs - 3 pcs.
Sugar - 150-200 g
Vegetable oil - 125 ml
Vanilla sugar - 1 tsp.
Flour - 320 g
Baking powder - 1 tsp.
Soda - Β½ tsp.
Salt - ΒΌ tsp.
Chocolate - 100g
For protein cream:
Water - 70 ml
230 g sugar
Citric acid - 1/4 tsp
Chicken protein - 3 pieces
Salt - a pinch
πPreparation:
1. Prepare the cupcakes.Β
Bananas mash with a fork, or crushed by the blender. Add the eggs, butter, sugar, vanilla sugar and whisk whisk until smooth. Add the sifted with salt, baking powder and baking soda flour and knead the dough uniform. Add the chopped chocolate. Mix.
2. Spread in greased molds (if you use paper liners, there is no need to grease). Put in a preheated 180Β° C oven and bake for about 25-30 minutes.
3. Prepare the cream.
1) Before we cook the sugar syrup, rinse well under running water, eggs and beat with a knife, carefully separate the yolk from the protein, putting them in a separate bowl and refrigerate. This process is extremely necessary, because the cooled protein will be better and easier to be whipped!
2) In a saucepan pour the water and put on high heat and let the water boil. Then reduce the heat to medium and pour a cup of sugar. Using a tablespoon of good stir the sugar in boiling water. Sugar syrup, bring to a boil and continue to cook over low heat, stirring occasionally it a tablespoon. Set aside the pan with the syrup aside and cover it with a lid, to the syrup is hot. Fire can not turn off, since it is possible we will have a little to warm the syrup before we connect it with whipped cream.
3) Egg whites from the refrigerator and pour into a wide saucepan. Always at the beginning add a pinch of salt, since salt due to protein will be better whipped. And now, holding the bowl with one hand, whip the whites. You can add protein and citric acid to taste, but this is optional.
