Morning vibes bring along with it inspiration from the invisible , and today's atmosphere just called for a pastry filling with dates .
Sweets is a form of happiness , and baking is the magic wand that spreads it all over. nothing tastes more rewarding than the results of a successful savoury .
An ancient Arab dessert , either filled with dates which is often known as menenas , pistachios or nuts.
The shape is up to u 😉 u can either leave it in small balls , or shape it in a specific mould.
Personally I think they are perfect for any occasions, but it's mostly served at religious festivals
The Arabs serve them at Eid-ul-Fitr, or Eid-ul-Adhaa and the nights of Ramadan (Iftaar).
Recipe
500g semolina
500g un pitted dates
1 glass of melted ghee (clarified butter)
1/2 glass of oil.
1 tsb (10g) baking powder
2 glasses powdered sugar (castor)
1 glass all purpose flour
1 tsb rose water
1 tsb sesame
2 tsb honey
1/2 glass milk (or condensed milk)
Place the semolina in a bowl , add the melted ghee to the bowl , then the oil. mix the ingredients with hand till the wet mixture is absorbed by the semolina
Set in the fridge overnight (the longer time given to take texture the better results) I personally however have set it aside for only 2 hours.
After letting it take form , which basically makes the semolina more thicker , add the dry ingredients (sugar , baking powder , and flour).
Add the milk to the dry ingredients and a spoon of rose water + a spoon of vanilla extract .
Mix well together and set aside. (By forming it into balls)
Process the dates in a food processor until it becomes like a puree (in this baking experience I left mine to be in little pieces rather than a puree) , add the honey and sesame to it . Form into lil balls and set aside.
