I love baking with seasonal berries, especially pies. The only problem
- do not really want to turn on the oven in the summer. Such pies can
be prepared in winter, for example with frozen berries.
1.5-2 glasses of blackcurrant or blueberry
200 g melted butter
3/4 cup sugar (150 g)
2 eggs
1 tsp baking powder
2.5 cups of flour (375 g)
a pinch of salt
3/4 cup of milk or kefir (180 ml)
Berries are washed and dried. In a small bowl, mix the dry
ingredients: flour, baking powder and a pinch of salt.
In a separate bowl, mix the melted butter and sugar. Add lightly
beaten eggs one at a time.
To butter gradually add dry ingredients and milk, alternating. Beat
with a mixer, so that there are no lumps.
Shape the oil with oil and lightly sprinkle with flour. Pour the
dough, pour half of the berries, lightly drown them in the dough, then
pour out the remaining berries.
Put in the oven preheated to 180 C. Bake for 20-25 minutes until the
top is browned and the berries do not start to burst. Before serving,
cool down. You can serve with whipped cream or sour cream.
