Ingredients - Makes 12

Dough
2 cups Milk
1 teaspoon Salt
1/2 cup Softened Butter
2/3 cup Caster Sugar (broken up into 1/2 and 1/4 cups)
1/2 teaspoon Nutmeg
4 Eggs, beaten
2 teaspoons Dried Yeast
5 cups Self Raising Flour

Deep Frying
6 cups Vegetable Oil

Glaze
3 cups Icing Sugar
1/2 cup Water
1 teaspoon Vanilla Extract

On Nicko's Kitchen (YouTube) every week we have store bought VS homemade challenges. To skip direct to the recipe portion of the video head to 3:35.

Method

Step 1
Into a mixing jug, add your milk, salt, butter and place in the microwave for 1 minute to warm. If it's still cold microwave for another minute. Now add sugar, nutmeg, eggs and whisk. Pour into a large mixing bowl and add the yeast and extra sugar. Whisk again and then add the flour, one cup at a time mixing in between until you get a sticky dough. Cover and leave the dough for 1 hour.

Step 2
Flour a flat surface, pull out the dough and knead for 2-3 minutes. Roll out and using cookie cutters cut the outer and inner ring.

Step 3
For the glaze, into a large bowl add your sugar, water and vanilla. Whisk until smooth and the lumps (if any) are removed. Set aside.

Step 4
Using a deep fryer or into a large saucepan over a med/high heat add the vegetable oil. When it reaches the desired temperature (180C/360F). Fry for 2 minutes each side or until golden and 'puffy'. Remove and drain on paper towel. Cool slightly.

Step 5
Dip and coat the donuts all over with the glaze. Drain the excess off and leave aside for several minutes for the glaze to harden. Serve or keep in a air tight container until needed.

I've always considered glazed doughnuts ... well, intimidating. But these sound easier than I expected. They look delicious. I look forward to trying them. Thank you so much for the inspiration. Resteemed (so I know where to find them again. I'm really too new here to do you much good. ) Have a marvelous day.
