SuJeongGwa (수정과)- Korean Cinnamon Tea

Su Jeong Gwa also known as Korean Cinnamon tea is a traditional Korean tea that can be enjoyed either hot or cold.

It has multiple health benefits as well!

It helps to increase metabolism, boost the immune system, and help with digestion to name a few of the benefits.

Plus it tastes great!

Here's a simple way to make it:

Ingredients:
Water
Cinnamon sticks - there are different types. We like to use Ceylon Cinnamon sticks because of its more subtle flavor
Ginger
The traditional fruit ingredient is Asian Pear, but this can be substituted. We used half a Fuji Apple and 2 Dried Persimmons
Brown Sugar
Pine nuts for garnishing if you have them

This recipe should be adjusted to individual tastes because some people may like more or less of a cinnamon or ginger flavor.

We used all of the sticks of cinnamon shown which is about seven 5 inch sticks.
As a visual, this is how much peeled ginger we used.

Put all the ingredients together in a medium sized pot of water and boil away!

As the tea begins to boil, the color of the water begins to take on the color of the cinnamon!

Add brown sugar to individual taste.
Pro tip: while the cinnamon tea is hot, it is harder to appreciate how much sugar you've added. If in doubt, let the tea cool down and see how it tastes before adding more sugar.

Today we had it cold, but it can be served either hot or cold.
Tea can be garnished with pine nuts which adds a great nutty flavor to compliment the tea.
