This delicious lemon pie or cake is very easy to make and delicious. With condensed milk and a biscuit base maría. You can also use gluten-free cookies and you will have a delicious dessert suitable for coeliacs.
The ingredients

FOR THE BASE:
25 cookies maría
50 gr of melted butter
FOR FILLING:
2 cans of condensed milk (370gr each)
4 egg yolks
1/2 cup of lemon juice
1 ctts of gelatin or neutral gelatin powder
30 ml of milk
FOR THE MERENGUE:
4 clear
4 tablespoons of glass sugar
1 tablespoon of lemon juice
STEPS
-30 minutes
Crush the cookies and mix well with the melted butter. Cover the entire bottom and walls of a glass plate to pay and tighten the cookies very well with the bottom of a glass.

-Put to soak the grenetina in the milk. Stir well and heat in the microwave so that the tibia is hot.
-Put in the blender: condensed milk, 4 yolks, lemon juice and milk with gelatin. Empty the mixture on the base of cookies. Refrigerate.

-Beat the whites with an electric mixer until firm peaks form. Add the icing sugar and the tablespoon of lemon juice little by little. Beat very well.

-The meringue extends over the entire surface of the foot. The peaks are made with the belly of a spoon.

-Brown on the oven rack for 1 or 2 minutes. You just have to take color, be very careful not to burn. It is brown very fast.

-Refrigerate at least 3 hours before serving to make it very cold and firm. Delicious! enjoy!
