Vegan pumpkin risotto...🍊I could have this every day and not complain...

So easy to make, it needs about 20 min. on medium heat. In a little bit of olive oil add some diced white onion and the pumpkin cut in small cubes. After 3-4 min. add the rice and gradually vegetable soup, stirring constantly until the rice is cooked.

Thank you! I used salt and freshly grounded pepper 😊 Because I used vegetable soup it doesn't really need anything else to it. The flavour of the pumpkin is just perfect for me.
