These are a soft moist biscuit like scone. Not like the hard dry ones you see at coffee houses. They are sweet and tasty and go well with coffee for breakfast or afternoon snack.
They are easy to make. Here is the process and recipe follows.
Add all the dry ingredients into bowl.
Add liquid, mix and knead lightly.
Portion and flatten slightly with wet hands, cuz it is sticky.
Bake.
Recipe:
Double Chocolate Scones
2 cup all purpose flour
2/3 cup unsweetened cocoa powder
1/2 cup sugar
3 Tbl buttermilk powder
3 tsp baking powder
1/2 tsp salt
10 Tbl unsalted butter
1 1/2 cup semi-sweet chocolate chips
1 tsp vanilla
1 cup water
Method:
Preheat oven to 425 degrees. Combine flour, cocoa powder, sugar, buttermilk powder, baking powder and salt; cut in butter. stir in chocolate chips until well mixed. add vanilla to water and stir into dry ingredients until just moistened. turn out onto a lightly floured surface and knead 4-6 times. I like to knead it on a piece of parchment paper. pat out to 3/4 inch thick and cut out rounds. or use a 2 ounce scoop. place 1 inch apart on lightly greased baking sheet. bake 10 to 12 minutes or until lightly browned. makes 14 scones.
