Caramelised banana & chocolate cream crepes

Nice and easy dessert for all skill levels to enjoy. I like to make banging stuff that's a doddle to make!

Crepes

180ml cold milk
180ml cold water
3 eggs
15g demerara sugar
1 tsp vanilla essence
185g plain flour
60g melted butter
3 tbsp cooking oil (roughly)

Filling

So i halved the amount for the filling as I wanted to use the remaining crepe batter for a savory cheese and shiitake shroom crepe ;)

2 bananas (4 to use with all the mixture)
30g demerara sugar
25ml maple syrup
knob of butter

So, go ahead and throw all the ingredients for the batter into a bowl and whisk it up good.

Leave the batter to settle for 30 mins...
While it's settling, melt your chocolate, I used plain chocolate but use what ever chocolate you fancy...

Once it is fully melted fold in the double cream then whisk it up thick once it's folded in.

Now pop your chocolate cream in the fridge while you prepare the caramelised bananas.

Slice up the bananas then throw the lot into a saucepan and simmer for 5 mins, shaking them around regularly.

Once that is done you can pop them in the fridge. I prefer to leave the bananas at room temperature though. The choice is yours!

Now all that is required is to heat up the pan with a splash of cooking oil. Make sure it covers the pan once hot then pour in enough mix for a crepe. Again this is a personal choice, i prefer them thin so i can make a small pile of them. More on my plate the better :)
Allow to cook on one side for a minute or two then toss over and finish the other side off before serving.

And that's that. Ten minutes later you have a banging dessert / lunch snack you can wow any guest with!
