潮汕喜牛肉,多佐以粿条。
粿条者,一种米制品,以稻米磨粉,下水成浆,盛以铜盘,蒸之,即成。晾凉,切条,就是粿条,类似广州的河粉。
牛肉亦有特独风味,尤以牛肉丸最为著名,正宗汕头牛肉丸,为纯手工打制,以钝刀反复锤打生牛肉,以至成浆,而后制成。其丸酥脆而有嚼劲。坠地可弹起,若乒乓球然。
如此牛肉炒粿条,遂成潮汕名菜。
