Plantain Fritters
Everyone loves potato pancakes- but now they can be made with plantains!
| Prep time: 10 minutes | Cook time: 10 minutes | Serves: 6-8 |
Ingredients:
4 Green or Yellow Plantains
6 Cloves Garlic
¼-½ Cup Gluten Free Pancake Mix (Optional)
½ Tsp Sea Salt
High Heat Frying Oil of your choice (Canola, vegetable, avocado)
Directions for Cooking
Smash plantains with any kind of masher or if you have a 6 year old- let them do it with FRESHLY WASHED hands.
Crush and dice 6 cloves of garlic. If the plantains have turned yellow you may want to add in ¼ - ½ cup of Gluten Free Pancake Mix to make it less wet. Heat your frying pan with ¼ inch standing Refined Avocado Oil or high heat frying oil of your choice. Heat to 375* and ladle spoonfuls of Smashed Plantain into the pan.
Flip when golden browned on the bottom.
Oops. Some little person must have needed a thing.
Do not let them cook this long because these are slightly burned. See? Even I can overcook dinner. It happens. And as a parent I have gotten used to eating the burned bits that no one else will. It’s my new way of marking my territory apparently. At least they won’t ask me to share. The loving sacrifice of parents.
Cook until nicely browned on both sides. Lightly sprinkle with sea salt (optional and to taste).
Serves 6.
This is a great compliment to the Pickle Chicken Tacos recipe. These are a bit like a potato pancake.
Why Plantains?
With plantain fritters you don’t have to be so worried about what state your plantains are in. Where we are it is difficult to get to the grocery store right when they have green plantains- which is what I used to make garlic plantain chips with. I cannot tell you how many times we have bought green plantains with the intention of using them right away but one thing or another happens and “OH CRAP! THE PLANTAINS HAVE TURNED YELLOW! EVERYTHING IS RUINED!” With the fritters though, the plantains can be green, yellow or even transitioning to black for them to be useable in this recipe. More flexibility= every parent’s dream!!!!!
Also plantains are a healthier choice that a standard potato. They contain some protein, and 20% of you daily value of: Vitamin B6, Potassium, and Magnesium- all packaged in a tasty carbalicious, gluten free starch that can be fried and topped with salt.
I will forever preach the use of gluten free pancake mix over using standard gluten free flour mixes. The starches are right and provide enough of a lighter/fluffier texture as so many flour mixes can be so heavy, and fragile.
