Ingredients
1 lb. semi-hard white cheese
2 cups multi-purpose wheat flour
5 tablespoons of butter
1 egg
1/2 teaspoon salt
2 tablespoons of sugar
4 to 5 tablespoons of cold water
4 cups of corn oil (for frying)
Step 1 :
Cut the cheese into strips 3/4 inches wide by 2 3/4 inches long.
Step 2:
On a flat surface, place the flour in the form of a crown with a hole in the middle, where you add the butter and the egg. In a small container mix salt, sugar and cold water. Gradually add the water mixture to the flour and knead with your fingers until it is smooth and does not stick to your fingers. Make a ball and let it rest for at least 1/2 hour at room temperature.
Step 3:
Sprinkle flour on a flat surface and with the help of a roller extend the dough to form a square about 1/8 "thick. Then cut into uniform strips with the help of a sharp knife.
Step 4:
Place the cheese on one end of the dough strip and wrap until it reaches the other end (completely covers the cheese). Seal the ends with your fingers to prevent the cheese from coming out when frying.
Step 5:
Heat the oil over high heat in a frying pan. When the oil is hot, lower the heat to medium. Carefully fry the tequeños until golden brown and crispy.
Step 6:
Place on absorbent kitchen paper to extract excess oil.
Step 7:
And to eat it has been said!
