Welcome to The Cooking Trials. This installment was my solution to not cooking a full dinner because I was lazy and also craving breakfast for dinner. This is the Dinner-Breakfast Scramble.
Ingredients:
- 2 eggs
- 1 onion
- 1 sweet pepper
- 1 tomato
- Broccoli (as much or as little as desired)
- Carrot (as much or as little as desired)
- Butter (or substitute)
- Salt (to taste)
- ½ teaspoon paprika
- 1 teaspoon curry
- 1 teaspoon lemon pepper seasoning
- 1 teaspoon black pepper
- Dried basil
Process
First, I set some water to boil with salt and “butter” (it’s not actually butter) over high heat (in the interest of time) to cook my chopped broccoli and carrots.
While the water was heating, I set about chopping the onion, tomato and sweet pepper. After everything was chopped, I placed a frying pan over medium heat with about one and a half tablespoons of “butter”. Once the “butter” was melted, I dropped the onions and sweet pepper in and allowed them to start cooking.
While the onions were going, I moved back to the now boiling water and dropped in the carrots and broccoli.
While the veggies were cooking, I moved back over to the onions, which at this point were on their way to browning. Next, I added the tomato and allowed the juices to start cooking.
After about four or five minutes (depending on how firm you like your broccoli and carrots cooked really), I took the veggies out of their water with a slotted spoon and set them aside in a bowl.
Moving back over to the frying pan, I turned the heat down a little and added the eggs and started to scramble them. When the eggs were just about cooked, I added in the veggies, paprika, curry, lemon pepper, black pepper and basil leaves and stirred until everything was coated and combined. I let everything cook for about another minute before turning the heat off and serving.
