Easy Fruit Cake recipe

Ingredients
Serves-- 8
225gr self raising flour
110gr butter
110gr sugar
225gr mixed fruit
1 egg
5 tablespoons milk
1 teaspoon mixed spice


Method

Rub the butter into the flour till it's like fine breadcrumbs, add sugar and edible fruit and mixed spice, if using.
Add egg and milk to form a soft dropping consistency.
Put into lined two pound loaf tin or 6" spherical cake tin. Sprinkle demerara over the highest and pat down with the rear of a spoon (this offers a pleasant crisp top) and bake for about one to one 1/4 hours during a preheated kitchen appliance at one hundred eighty C / one hundred sixty C fan / Gas four till a skewer comes out clean.
Make ahead
I combine the flour, sugar and butter in my mixer with the blade attachement till i buy the crumb stage so freeze, then simply take away from the fridge add the remainder of the ingredients and bake. If you double, triple, etc. these initial 3 ingredients to place within the fridge then you merely ought to weigh out 445g / 1lb then add the remaining ingredients to bake ONE cake and save the remainder for an additional time.
