童年夏天的时候，趁着黄昏和夜色，去村子后边的小树林里摸知了猴(金蝉 Cryptotympana atrata Fabricius )，是暑假每天必修的“重要”大事。
话说这知了猴，全身都是宝，不但有高蛋白、高营养、纯天然、无公害、纯绿色，还有中药价值。
每天晚上回到家，我总是能摸到几只知了猴，回到家时，用盐水泡着，然后就睡觉去了。
第二天天刚亮，还没睁开双眼，就已经闻到了厨房里传来的菜籽油的飘香味，还有另外一种特别的味道。不用说，一定是妈妈给我开始油炸知了猴了。
多年后的今天，突然回味起童年的美味，但身处在城市里已经很难再捉到知了猴。幸好有万能的淘宝(taobao.com)，在网上下单后，顺丰快递，第二天就送到了。
先将冰冻的知了猴在水中化开
用水清洗干净，一般7-8次水即可干净
准备好配料，配料其实很简单，花椒、干辣椒、姜片
将配料加入，再撒些食盐，加水，腌制3-5小时
注，如果你担心夏天太热，可以放到冰箱里
热油时，记得油温不能太高，否则容易黑焦（油温有点高，导致后边炸的稍微老(黑)了点 ）
出锅，准备开吃！
