Stuffed half poblano peppers I made which include:
Lime-Cilantro-Cream Cheese
White Rice
Shredded Chicken (spiced with cumin/lime/chili powder/salt/black pepper)
and topped with a bit of extra sharp cheddar cheese.
Poblano peppers were boiled for 3 minutes to pre-cook, and assembled with the above mentioned ingredients, peppers were then roasted in a 400 F oven for 15 minutes to allow the flavors to get to know one another.
These peppers look hot as hell. ;)
