ROASTED VEGETABLES WITH POTATOES {Vegan Recipe - Food photo shoot}

In Greece with serve this, as a main dish, but if you like you can serve it as a side dish. Its very easy, delicious, vegetarian, summer plate full of lovely flavors from the vegetables and stunning aroma notes from herbs !

Ingredients

• 4 potatoes
• 1 onion
• salt
• pepper
• 4 zucchini
• 2 carrots
• 2 cloves of garlic, minced
• olive oil
• 3 tomatoes, chopped
• parsley
• mint leaves
• thyme
• grated zest of a lemon

Method

• preheat oven to 220*C
• chop the zucchini, the onion, carrots, potatoes in to slices and transfer to a baking pan
• add garlic, olive oil, mint leaves, parsley, lemon zest, tomatoes, salt and pepper and toss
• add half glass of water
• bake for about 90 minutes to 180-200*C ( until the vegetables get golden brown and crispy)
• serve with fresh parsley, thyme and ground pepper
