Japanese Mushroom Soup @senseicat

This is a lovely starter soup that is frequently served in Japanese restaurants at the beginning of the meal. My preference is miso, but it is a wonderful change in pace.

All the Japanese restaurants Ive been to dont put salt or pepper on the table, and when you ask for salt, supposedly the chef is offended. So I always bring my own salt and pepper. Everytime I leave a Japanese restaurant, I (we) end up going somewhere else to eat, because you will never leave a Japanese restaurant "full", even after spending $300 on 2 people.

I know what you mean that everyone has their unique tastes. Due to the high cost of Japanese food, I go for the lunch specials which are delicious and significantly more affordable.

Looks like young shitake mushrooms, celery, green onion, a few drops of olive oil, water and beef boullion.
