If you like sweet potato and quick easy meals then this post is for you. Since removing meat from our diet the challenge has been to come up with tasty belly filling meals that are packed full of nutrients to fuel us through the day. One of my favorites is Fried Sweet Potato Salad. This meal is not only deliciuos and filling and packed full of what you need but it is also versatile in that it can be served hot straight from the pan or it can be chilled and served cold. Get your chef on then grab a blanket and head to your favorite picnic spot....grubs up!
