Hello steemit friends,i would like to share my lovely chicken and chorizo stew recepie with you as it's just soo tasty to keep to myself and pretty easy to make.
You'll need,
~A large pan with lid
~4-5 chicken fillets (roughly diced)
~1 (225g)chorizo sausage (sliced)
~1-2 onions (sliced and chopped)
~garlic (2-5 sliced cloves)i love garlic so the more the merrier,
~mushrooms (quartered or halved)
~3-5 carrots (sliced)
~pepper (chopped)
~1-2 potatoes (ideally maris pipers or baked,sliced then cut into chunks)
~chicken stock (500-700ml)
~1 tin chickpeas,drained and rinsed
~1 tin peeled plum tomatos
~1 tablespoon of mixed herbs
~pitted olives,either halved or whole(optional)
~chilli(optional)
~tomato puree(optional)
Salt and Pepper to season
Prep ingredients
Method:
Fry the chorizo on a medium heat in a large pan till oil is released
Then add the onions until soft (after a few minutes)then add the garlic
Add chicken and sear by stirring,then add the mushrooms,mixed herbs,chilli,olives,pepper,chickpeas,carrots and potatoes,season with salt and pepper and stir together
Next add the tomatos,stock,pepper and tomato purree and mix well and cover
Cook for 30-40 mins on medium heat with lid on ,stirring occasionally
After 30-40 mins take the lid off and stir,cook for a further 30 minuites,or until sauce reduces and the carrots and potatos are softened
Serve either on its own,with chilli flakes over the top,with garlic bread or just rustic bread
