In honor of today being World Meat Free Day, I present my contribution at suppertime.
I first read about the holiday on I Fucking Love Science, http://www.iflscience.com/environment/why-meatfree-one-day-year-according-science/
Now, I'm not a vegetarian, but I am trying to raise my family to eat healthy. Do I make perfect choices? Noop. I love carbs way too much and I had about 30 minutes to make supper. So my family's compromise for supper tonight was olive and cheese pizza pockets.
I used the pizza crust recipe from King Arthur Flour, http://www.kingarthurflour.com/recipes/the-easiest-pizza-youll-ever-make-recipe with the exception that I didn't allow time for rising, so my kids wouldn't stage a mutiny waiting for supper.
The filling was 3-cheese marinara sauce, cheddar cheese, mozzarella cheese, and black olives. I also sprinkled extra mozz on the top, just because we can't allow ourselves to be cheese deficient!
Not pictured are the fruit cups I served alongside, because children can't live on cheese alone- though my kids try.
One pocket fed two small children or one adult, with one left over for my lunch tomorrow.
