Butternut Squash

This one of my favorite soups that the kids also absolutely love! Even kids that say they won't eat any vegetables, they will love this soup when they taste it!

Butternut Squash Soup
1 (2 to 3 pound) butternut squash, peeled
4 tbsp. olive oil or butter
1 medium onion, chopped
6 cups chicken stock or water
2 pc minced garlic
1 tsp. ginger
1/2 cup light cranberry juice
3 pc. sundried tomatoes copped
1 medium granny smith apple peeled and chopped
salt and pepper to taste

Cut squash into 1-inch chunks. In large pot melt butter(olive oil). Add onion, garlic, ginger, sun dried tomatoes and cook until translucent, about 5 minutes. Add squash, granny smith apples and cranberry juice. Bring to a simmer and cook until squash is tender, about 10 minutes. Add chicken stock or (water) cook about 20 minutes. Puree with food processor until it's all smooth. Stir and season with salt, and pepper.
