Pulpo a la brasa con puré de patatas violetas y aire de pomelo
¡¡¡Muy buenas Steemians!!! Hoy os voy a contar algo de un platito que puse estas navidades, muy vistoso y muy rico… la verdad que no quedó nada. Es un plato sencillo pero el resultado es fascinante, ya veréis.
HI STEMIANS!!! Today I'm going to show you something about a little dish that I cooked this Christmas, very colorful and delicious. The truth is that at the end of the dinner nothing was left. It's a simple dish but the result is fascinating, you'll see.
Es un pulpo braseado sobre un puré de patata violeta con aceite de oliva virgen extra (como siempre), una base muy importante en mi cocina, el llamado “Oro Líquido”, con un toque cítrico muy vistoso como lo habéis visto, un aire de pomelo.
It is a braised octopus on a violet potato puree with extra virgin olive oil (as always), a very important base in my kitchen called "Liquid Gold", with a very colorful citrus touch as you have seen it, an air of grapefruit.
Aunque parece difícil no lo es. Tenemos el pulpo previamente cocido, lo cortaremos en rodajas sesgadas para que luzca más bonito a la hora de su presentación y lo plancheamos en una parrilla bien caliente, le daremos un toque con un tipo de sal ahumada en escamas, lo que simulará las brasas.
Although it seems difficult, it isn't. We have the octopus previously sewn and cut it into slices, biased so that it looks more beautiful at the time of its presentation and we iron it on a hot grill, we will give it a touch with a type of smoked salt in flakes, that will simulate the embers.
Una vez que tenemos todos los ingredientes preparados lo presentamos con gusto sobre el plato deseado.
Once we have all the prepared ingredients, we present it with taste on the desired plate.
El aire es un zumo de pomelo con lecitina de soja, la cual pasaremos por un túrmix para sacar esa delicada espuma, que le aportará al plato la vistosidad que tiene y ese delicado toque cítrico.
The air is a grapefruit juice with soy lecithin, which we will pass through a turmeric to extract that delicate foam, that will give the dish the eye-catching quality it has and that delicate citrus touch.

Pues no he estado, pero es un plato que se está poniendo de moda en caso todos los restaurantes así con un poco más de nivel. El toque que le he dado ha sido el de la patata morada y la espuma, que está espectacular....
