I can't think of a better way to enjoy the warm sunny days than to have a BBQ with friends and family. One of my all-time favourites are flame grilled Chicken Kebabs.

They are simple, delicious and can be made in a variety of ways to suit any palate and any occasion. Here is how to prepare quick and easy Chicken Kebabs that will leave your guests wanting for more.

Prep Time: 5min

Serves about 5 – 7 people but you can add or subtract as you see fit. It also depends on how large or small you cut your portions and whether your guests have large appetites or not.

Ingredients

• x5 full chicken breasts cut into cubes
• ample wood or stainless steel skewers
• x2 green bell peppers
• x2 red bell peppers
• x2 yellow bell peppers
• x3 onions
• citrus (pineapple or orange)
• x1 tomato (optional)
• *any basting sauce of your choice
• *any dry rub ready mix BBQ Seasoning of your choice

Suggestions:

*For a more traditional South African Braai Seasoning you can mix 1 tsp. (5ml) of each of the following spices: salt, pepper, paprika, cayenne pepper, ground cumin, ground pimento, ground coriander, mix herb and lemon zest

*As a basting sauce you may use any of the following: BBQ sauce, hot sauce, honey and mustard salad dressing or even a mix of ketchup and mayo which I find goes well with chicken.

Method

Simply cut all your ingredients into squares and cubes starting with your chicken. Season your chicken generously with the dry rub only and leave to rest in a cool place while you prepare your vegetables. Your grill should be hot and ready.

If you intend on using wooden skewers than place them in cold water before you begin skewering your Chicken Kebabs to prevent the wood from burning on the fire grill. You can also use a George Forman grill.

You can layer your cut ingredients any way you like but only add your citrus and tomato after the Chicken Kebabs comes off the grill as it’s flammable. I usually layer in order of: chicken, onion, green bell pepper, chicken, onion, red bell pepper, chicken, onion, yellow bell pepper.

Grill for about 2min on each side and then remove from the grill and brush on your basting sauce and finally skewer your citrus. Your Chicken Kebabs are best served with a fresh salad consisting of avocado, feta cheese, lettuce, cucumber and corn on the cob.

I hope you enjoy this recipe and have fun adding your own twist to it.
