SWEET POTATO BREAKFAST HASH
Ingredients
- 1 large sweet potato, diced
- 3 cloves garlic, minced
- 1 diced red onion
- 1 yellow bell pepper
- 1 red bell pepper
- 2 green onions
- 1 tablespoon fresh rosemary
- 1 tablespoon olive oil
- 4 eggs
The steps
- In a large skillet, heat olive oil over medium-high heat.
- Add sweet potato and cover it. Cook it until it starts to become soft. Make sure to stir it occasionally.
- Add garlic and red onion to the skillet. Stir again.
- Add bell peppers, rosemary and green onion to the skillet. Cover again and cook until sweet potato is tender.
- Make 4 wells in the vegetables. Make sure that there is no gap between the wells.
- Crack egg into each well. Cover it and cook until you achieve your desired egg consistency.
- Serve and Enjoy!
