Last night was a busy night because we needed to watch the Australian Open tennis match live at 7 pm, with our idol Halep playing against Davis.
I thought to myself - I must make an easy and quick dinner and not waste any time in the kitchen if I wanted to enjoy this match.
At the same time, we had a lot of leftover potatoes, hot dog (organic), tomato, green onion and cheese that must be used up before they get spoiled. My thinking was, it would be great to use them to make a quick easy dinner.
Since I had not have quiche for a long time, so I thought I would use all the identified ingredients to make a quiche. And yes, this is truly a versatile dish that you could add anything to it.
The steps are simple:
- I first thinly sliced the potatoes, seasoned with salt, pepper, parmesan cheese and oil. Layered a baking dish with the sliced potatoes and baked at 400 for 20 minutes.
- While the potato pie crust was baking, I combined eggs with chopped green onion, tomato, cubed hotdog and seasoned with garlic powder, salt and pepper.
- When the pie crust was ready, I poured everything into the dish and topped with cheese, then baked for another 30 minutes
- We served this quiche with a simple cucumber salad to have a balanced meal.
You see, dinner was as easy as 1-2-3 and a-b-c. At the same time, I felt great that my fridge is all cleaned, lol.
It was also good that I kept dinner simple because the tennis match ended up lasting for 3 hours and 45 minutes.
In the end, my idol Halep won. Yeah!!! I am particularly proud that she fought till the end, overcome errors and fatigue to win the game. My heart is so full.

Very good idea you had! I cooked myself this days a quiche exactly for the same reason! ~leftovers such zucchini and mushrooms~
