A Mediterranean Summer Lunch Made with Alacrity!!!

Today I decided to make a healthy summer lunch but then it went from healthy to include a few homemade chips to go along with it. I started off with buying some Garlic Focaccia Bread, a tin of sardines in brine, 1 tomato, 1 garlic, Cyprus black olives, salt, black pepper, Oregano, & some Basil.


Step 1: 

I emptied the tin of sardines into a bowl

I then added some chopped tomatoes, onion, 2 cloves of garlic.



Step 2:

I cut 2 thick slices of the Garlic Focaccia Bread


Step 3:

I then gave the bowl a good mix, and added some salt, black pepper, garlic salt, oregano, & basil


Step 4:

I then mixed it up some more and with a spoon I scooped up a large portion to cover 1 side of the Garlic Focaccia Bread slices. 

I then added 2 black olives on top of each.

So far it is a healthy summer lunch, BUT then I decided to make some homemade chips to go along with them. :)

I cut 5 medium sized Cyprus Potatoes 


I then used Mazola Corn oil in a large frying pot and heated up the oil to high heat. 

I also added 1 whole onion into the frying oil for the very first time (Which was a comment recommendation by @gomeravibz  in my previous post ) he had mentioned it was a Belgium mouth watering state secret.  So I said I would give it a try & I am am very glad that I did! :)


After taking the final picture I then added some ketchup with the chips :) 

This summer lunch was par excellence!

Sardines are one of the healthiest foods. Anything to enhance my sardine palate gets my love. Side Note: Alacrity is one of my GRE words today
