Pink Kitchen #2: Easy fluffy pancakes with blueberry sauce, caramelized apples and Nutella heaven

Happy Easter everyone! How are you on this beautiful Sunday? For me, Sundays are made for family and friends. We always gather together in the weekend to enjoy food, talk and spend time with each other.

This results mostly in my mum cooking, while we, the kids try to talk as loud as possible since we all have something to say. It's one big loud uncontrolled mess and I love it. The older I get the more I cherish my family and our moments together, because I know one day it all will change when we have careers to chase and babies to pop.

This weekend I had the pleasure to host the whole chaos at my place. Normally we always eat Vietnamese food when we have a family gathering (must have something to do with mum cooking ;), but this time I decided to make some of my favorites: pancakes!

It was a big success and everybody loved it. So if you want to be everyone's favorite sibling, you better start mastering the part of the fluffy pancakes. Thanks to me this will be a piece of a (pan)cake.

You can also serve this as a dessert with a scoop of vanilla ice on top.

Here is the recipe. Enjoy!

  • Flour
  • One Egg
  • Vanilla extract
  • Backing powder
  • Bit salt and sugar
  • Melted butter

For the sauce:

  • Frozen blueberries and red fruit
  • Fresh blueberries and raspberries (optional)
  • Nutella

Caramilies apples:

  • Apples
  • Cinnamon
  • Butter
  • Honey

Pancakes:
We want our pancakes to be fluffy and light. Are you ready for the hack? Don't over-mix. One common mistake is to over-mix the batter. To prevent this, we mix the dry and wet ingredients separately first before mixing them together. After you mixed them well separately, mix both in a big bowl until the batter is light and airy.

If you want perfect round pancakes you can use a cooking ring or a small pan. I also cover the pancakes a bit while cooking to prevent them from burning. Some pancakes are quite thick, and it will take a while to cook, this way it will fasten the cooking time without burning the pancakes.

Sauce:
Add everything in a pan. Add a bit water and cook really slowly. If you want to have Nutella sauce. Warm up a bit milk, add Nutella and stir until a smooth sauce. Cook slowly. If you are a lazy kitchen princess and you want to impress your guest without all the struggles: heat up water, put the Nutella jar in it, voila the sauce is ready.

Apples:
Warm the butter, bake apples, add honey and let it caramelize.

Serve the pancakes with a bit of real butter, the sauce on top with the apples and some sugar powder.
