Cooking with Aaron - Shrimp Scampi

Always use the freshest ingredients that are available to you.

This is a very easy to do and very tasty way to make Shrimp Scampi!

Makes 4 Servings: (Basic Scampi)

1 lbs of Shrimp - Peeled, Raw and Cleaned (Large or Small, at least 20 - 30 shrimp)
2 Tablespoons of Fresh Garlic - Finely Diced
1/2 Cup of White Onions - Finely Diced
4 Tablespoons of Mediterranean Garlic Oil.
You may substitute for pure Extra virgin olive Oil or 1/2 stick of Butter (If butter is used, you have to cook on a lower heat.)
6 oz of White Wine Dry or a White Zinfandel
1 tablespoon of Sea Salt, Black Pepper and Parsley.


Side Options:
you can use either a White Rice, Rice Pilaf or Angel hair Pasta. This is up to you.
I used the Angel Hair Pasta.

You should also serve with Bread, either a garlic Texas toast or good old non-buttered fresh bread.


Let's start!

1.) Cook the Side dish. For me it was the Pasta. I show you how to not let pasta clump up.
2.) Once the side dish it done or close to it you should start the shrimp
3.) Heat the Pan on a Medium High Heat (Unless using Butter then a Medium Low Heat)
4.) Add in the seasonings: 1 tablespoon of Sea Salt, Black Pepper and Parsley.
5.) Suttee for about a minute then add in the Shrimp.
6.) Make sure you have good lighting on. to verify the shrimp color.
7.) Simmer for at lest 5 to 8 Minutes, need an even cook on the Shrimp.
8.) Add 6 oz of Wine or to your taste..lol
9.) Simmer for an additional 8 Minutes. Depending on the size of the Shrimp used will determine how long you need to cook for. Just do not over cook them. (See the video for an accurate look at the color of the shrimp and how they curl a bit when done.)

  1. Plate one of two ways;
    Option one: put all of the pasta in the same pan you cooked the shrimp in and mix well then serve.
    Option two: Plate the pasta on then add the shrimp on top of each plate, the drizzle the juices in the pan on top of the shrimp and pasta.
    11.) Serve with your Bread of choice, I went with a Texas Toast.
