My mom is from Colombia so… even tho I was born and raise in Venezuela she always shares with us traditions from her country, I love to use this dough, is so easy and quick to make, besides you can always use different fillings for the pastelitos and tequeños so that can change it up a bit and you don’t have to eat the same all the time.
I have never made a recipe post so bared with me (and if have any suggestions on how I can improve you can always leave them in the comments!). here we go:
For start the ingredients
For the Dough:
- 3 cups of All-Purpose Flour.
- 1 tea spoon of Baking Powder. (is not really essential to use it I just like it makes the dough softer)
- 1 spoon of salt
- 2 spoons of sugar
- Liquid Milk (the amount would depend on the consistency you want to achieve so use it little by little usually is less than 100ml the amount required).
- 2 spoons of vegetable oil or 1 full spoon of butter.
For the Filling: - Whatever you want, I used cheese on mine, but it can be whatever you like sweet or salty.
Instructions:
Place flour on large bowl mix with the baking powder, salt, sugar and butter, add little by little the liquid milk combining everything with your hands while you pore the milk, Keep mixing and kneading until dough is no longer sticky, if necessary use more flour until is no longer sticky but remember the consistency of it has to be manageable. When ready let it rest for at least 10 minutes at room temperature.
Scatter flour on a clean, flat surface. Place dough on surface and roll into a square approximately 1/8 inch thick. cut out round disc shapes, doesn't need to be perfectly round, you can use whatever you have at hand to make the round shapes like a small plate, also the size will be up to you if you want big or small Pastelitos.
When you have all the discs cut out, place a spoonful of the filling on the middle of each one, The amount of filling will vary based on the size of the disc you made but in general, it’s easier to seal it if it isn’t overstuffed, To seal the pastelitos, fold the disc in half and seal the edges by pressing the dough with your fingers and then use a fork to help you make the edges close properly, just press the top of the fork against the edges.
Heat the oil in a frying pan over a high flame. Once the oil is hot, lower the flame to a medium setting. Carefully, fry the pastelitos until golden brown, they don’t take long in being done so be careful when you are cooking them to always check so they don’t burn to much.
And there you are done you can eat a pastelitos made at home now!

They sell beef and cheese pastelitos at the corner store by my house and they honestly probably account for 20% of my diet.
I've made them at home too, but I've never made the dough! I've always just bought premade, but I'm a from scratch kind of gal so I will be trying your dough recipe. Writing it down now actually...
