- sugar - 4 tbsp
- black pepper (ground) - 4 tbsp.
- dill (fresh) - to taste
- dill (dried) - to taste
Preparation:
- Mix salt, sugar and pepper.
- Cut the salmon fillet in half.
- Roll the fish in a mixture of spices from all sides.
- Finely chop the greens.
- Sprinkle the fish with a mixture of fresh and dry fennel.
- Fold the slices with a stack and wrap in plastic wrap.
- Place the fish under the press and leave at room temperature for 10-12 hours. 8. Then remove in the refrigerator for at least 12 hours (better to withstand a few days).
