according to me Flavour is the sensory impression of a food or other substances , and is determined by the chemical senses of taste and smell.
IMPORTANCE OF FOOD FLAVORS
It is responsible for overall sensory properties of taste and smell in any food products .
It plays an important role in consumer satisfaction , which will subsequently drives consumer’s acceptance and influences the continued consumption of foods

mainly two types of flavour use in food . natural and synthetic flavour
Natural flavours are substances, such as spices, herbs, roots, essences, and essential oils, have been used in the past as flavour additives .
Natural flavours include certain plant extracts like menthol from mint and citral from lemon grass.
Another group obtained by extraction from certain plant products – vanilla beans , licorice root , lemon peel , cherry , etc which are generally extracted in form of alcoholic infusion.
