Whole Mind Cooking: Create Your Own Sweet Potato Hash!

Great for breakfast, lunch or dinner, this hash is so easy to make and so delicious!

Cook time: 25 minutes

Servings: 4

Cost: $2.75

Ingredients:

1 large sweet potato, chopped into small cubes
1/2 diced red onion
1 teaspoon of coconut oil
1 teaspoon cinnamon
salt
pepper

Steps:

  1. Over medium heat, sauté 1/2 diced red onion in 1 teaspoon of coconut oil

  2. Once onions are translucent, add in 1 large sweet potato chopped into small cubes

  3. Add salt and pepper to taste and 1 teaspoon cinnamon, cook over medium heat for around 20 minutes, or until sweet potatoes are soft and crispy

Recommended: serve with quinoa and olive oil. Add cooked bacon pieces if desired.

Looks delicious indeed, but how sweet is it really? 🤔 I don't often use sweet potato for cooking because the sweetness can be a bit overpowering, at least for me.

Sounds good but I can never seem to saute sweet potatoes where they dont turn to mush. I am sure roasting them in the oven while I cook the onions would work, though.
