Chickpea fritters - vegan, gluten free, with spinach and amaranth - tutorial

Vegan, plantbased food is more and more popular. As a vegan chef people often ask me about fritters that stay as they are while frying and not crumble and swim all over the pan.
So, this is one of them. They are actually very simple to make and they are delicious and foolproof.

You will need:

chickpeas, raw, dried
spinach, cooked and chopped
amaranth flour
spices (garlic, pepper, salt, coriander, turmeric)

First, soak chickpeas overnight.
Next day grind them in the meat grinder, as fine as possible. Raw chickpeas won't fall apart when they are deep fried, but patties made from cooked chickpeas will.

Next, put the minced chickpeas in a bowl and add spinach (about 20% of the whole chickpea mass), spices, and amaranth flour (about 10% of whole mixture). Knead with your hands. Add some water if needed.

And fry in hot deep oil. If possible, sunflower oil, it is a bit more eco-friendly.
