Simple and easy to make Chicken
Serves 1
4-6 oz chicken .12 - .18 kg
1 tbsp milk 15 mL
2 tbsp crumbs (bread, cereal, crackers) 25 mL
pinch salt pinch
1 tsp oil 5 mL
Dip chicken in milk, then in the crumbs to which salt has been added. Place on a baking sheet. Drizzle with
the oil.
Bake 325oF (165oC) for one hour. Turn the chicken once during cooking.
Variations:
Prepare as above using the following crumb mixtures:
Parmesan Chicken _ Mix 2 tbsp (25 mL) bread crumbs with 2 tbsp (25 mL) parmesan cheese.
Cajun Chicken _ Mix 2 tbsp (25 mL) cornmeal with 1 tbsp (15 mL) Cajun spice mix.
Parsley Chicken _ Mix 2 tbsp (25 mL) bread crumbs with 1 tsp (5 mL) parsley flakes.
Suggestion for completing the meal: Stir Fry Vegetables (p. 105), whole wheat bread and milk.
